Goreng Terong (Fried Aubergines recipe)

  • 2 medium-sized aubergines
  • 1 large onion
  • 2 tsp paprika
  • ½ tsp chilli powder
  • ½ tsp brown sugar (optional)
  • salt
  • Vegetable oil

Cut each aubergine into six, lengthwise, and then cut each piece across into two. Sprinkle with salt and let stand for 30 minutes; then wash, drain and dry.

Slice the onion finely. In a heavy frying-pan, heat about 5 tablespoon full of oil. Fry the aubergines carefully, five or six slices at a time, until they are cooked. Put them on kitchen paper and keep them warm while you fry the sliced onion until soft (you need less oil for this; a tablespoonful will be enough). Add paprika, chilli, and sugar to the onion, and go on frying for another 2 minutes, stirring continuously. Season with salt. Just before serving, Add the fried aubergines to the onion, Stir every-thing up together, and serve hot.
